Banana Bread




Ingredients:
1/2 cup shortening
1 1/2 cups sugar
1/2 cup water
1/2 cup buttermilk (or 1 Tbsp vinegar mixed with enough milk to make 1/2 cup)
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup banana pulp
2 cups flour

Thoroughly cream shortening and sugar; add water.  Dissolve baking soda, baking powder, and salt in milk.  Mix milk combination with banana pulp.  Add flour alternately with banana pulp mixture, mixing well after each addition.  Bake in greased and floured (or wax-paper lined) pans at 350 degrees for 85 minutes (For large loaf pan; less time is needed for mini-loaves).
