Cornbread

Ingredients:

3 cups flour
1 1/4 cup cornmeal
2 Tbsp. sugar
2 1/2 tsp. baking powder
1 1/4 tsp. baking soda
1 1/4 tsp salt
1 cup cheddar cheese
2 sticks cold, cubed butter
1 cup buttermilk

Preheat oven to 400.  Mix all the dry ingredients.  Work the butter into the flour mixture with a pastry blender until it resembles pea-sized crumbs.  Add the buttermilk and stir until dough comes together. 

Chill for one hour, then roll into 3/4" thickness and cut out desired shapes.  Bake on a cookie sheet for 15 minutes or until lightly browned.
